You can get the Water Breathing in Demon Slayer: Midnight Sun by completing the prerequisite quest given by the Water Breathing Trainer. The quest requires you to fight a Water Breathing Slayer NPC.
Once you defeat the said NPC, which is quite a difficult task as he also uses the same Water Breathing style during the fight, you will learn the Water Breathing style. Just make sure to execute the Slayer at the end of the battle.
That being said, similar to the other breathing styles, you learn the Water Breathing style; you mustn't have any active breathing styles. Otherwise, you won't trigger the respective quest, eventually giving you access to the Water Breathing style.
